Another world first for the Method and Madness team at Midleton. This limited-edition release is a Single Pot Still Irish Whiskey aged in ex-bourbon and sherry casks, finished in wild cherry wood casks.

Wood from the cherry tree is characterised by its porousness; adding complex flavours of fine wine, capers and ginger spice.

Tasting Notes

Nose

Green and herbaceous, this nose opens with fresh-cut box hedge clippings, a crisp garden brightness. Subtle coconut fibre lends a creamy, tropical undercurrent, while shredded ginger adds a warming, zesty spark that hints at lively spice to come.

Palate

Fresh green herbs, black tea and pot still spices.

Finish

Long and fresh with prickly spice and toasted hazelnut.
