A single pot still whiskey matured in Ex-Sherry and Ex-Bourbon casks before being finished in French Chestnut wood casks.
Non chill filtered.
An experimental and enjoyable Irish pot still Whiskey with the first use of Chestnut wood (to my knowledge?) as a wood finish.

Tasting Notes
Colour
Rich copper-gold with deep amber edges and a warm chestnut-brown core.
Nose
A fragrant burst of tinned peaches in syrup opens the nose, followed by toasted vanilla and cinnamon reminiscent of French toast, with aromatic oak. Mint threads through chocolate, cherry, licorice and a creamy chestnut puree, yielding a lively, inviting aromatics with spice and sweetness in balance.
Palate
Aromatic and spicy on the palate with a syrupy, weighty body. Cherry jam, ripe orchard fruits, menthol, chocolate, banana toffee and praline.
Finish
Sweet, aromatic spice lingers with tinned peaches in syrup, toasted hazelnuts, cherry menthol and fragrant oak, a silky, lasting finish.
