Caol Ila's 8th release as part of the 2013 Diageo Special Releases.

Unpeated and bottled at natural cask strength of 59.6% and aged in American oak, rejuvinated American oak and Ex-Bodega European Oak.

Named in honour to Billy Stitchell who retired as distillery manager in 2013.

Tasting Notes

Colour

Golden amber with sunlit honey hues and a coppery glow.

Nose

Bright lime curd unfurls with a coastal spray, while oily pear drops gleam above a veil of salty seaweed and green olive oil.

Palate

Sweet citrus, salted green apple and oily vanilla coalesce on the palate, creamy and fresh with biscuity notes of bread dough.

Finish

Oily citrus lingers, with vanilla ice cream melting on a coastal pier as salty sea air persists, chilli flake on seaweed adding a final warming sting.

Caol Ila
(kowel-EEL-ah) Caol Ila was founded in 1846 by Hector Henderson near Port Askaig on Islay’s east coast, overlooking the Sound of Islay between Islay and Jura. Its Gaelic name refers to that stretch of water, and the site was chosen with access to sea transport and a water supply from Loch nam Ban. Ownership changed early, passing to Norman Buchanan in 1854 and then to Bulloch Lade & Co in 1863.
