Tasting Notes
Colour
Golden straw that deepens to warm amber, with coppery highlights and a hint of mahogany at the rim.
Nose
At first, a maritime hush: sea spray and faint peat, softened by vanilla-laden oak. The sherry influence unfurls dried fig and raisin with dark chocolate and toffee, brightened by orange zest and toasted almond. A pinch of cinnamon and clove adds warmth, while a shy note of iodine keeps it buoyant and refined.
Palate
On the palate, a refined sherried sweetness coats the mouth with bright fruit and gentle spice. Rich raisin and fig mingle with toasted almond and a trace of cocoa, while silky vanilla and oak provide structure. At 40% ABV it remains elegant, finishing long and slightly nutty, with lingering sherry warmth and a coastal, mineral undertone.
Finish
Long, elegant finish with sherry-soaked fruit, burnt sugar, and a sea-salt whisper. Dried fig, cocoa, and toasted almond ride on smooth oak, tapering to a warm, resinous ember that lingers with quiet confidence.
