Tasting Notes
Colour
Deep amber-gold with coppery highlights and a warm honey-bronze glow, a testament to long maturation in sherry- and bourbon-aged casks.
Nose
Rich and waxy, with a polished oak spine supporting a tapestry of blood orange, dried fruit, and cake spice. Leather-bound books mingle with dark honey and fruit-and-nut chocolate, while a subtle wisp of coal-tar smoke from a wood burner threads through, yielding a remarkably complete, refined aroma.
Palate
A dense, dark-fruited palate with waxy orange, bitter chocolate, dates and ripe figs, draped in rich honey and sherry- or cognac-soaked cake, caramelised Demerara sugar on baked apples. Subtle hints of wood smoke or char accompany a thick, malty, chewy mouthfeel.
Finish
Fruit and nut chocolate lingers with aromatic cake spices, stewed plums in brandy and dark honeycomb. Subtle tar smoke and polished leather weave through notes of honey-cured ham and preserved figs, finishing with brown sugar-topped ginger macchiato and a long, warming spice glow.
