Nose

Rich and waxy with just the right level of polished oak showing beyond the layers of blood orange, dried fruit, cake spice, leather bound books, dark honey and fruit and nut chocolate. Add in subtle hints of coal tar or smoke from a wood burner and you have one of the most complete noses around.

Palate

More dark and dried fruit than you would find on a Christmas edition of bake off! waxy orange, bitter chocolate, dates, ripe figs, rich honey, sherry or cognac soaked cake, caramelised demorera sugar on baked apples and again hints of wood smoke or something charred here along with a thick, malty and chewy mouthfeel.

Finish

Fruit and nut chocolate, aromatic cake spices, stewed plums in brandy, dark honeycomb, woody tar smoke, polished leather, honey cured ham, preserved figs, brown sugar topped ginger machiato, more late spice and long, long finish.
