Tasting Notes
Nose
Rich and waxy, with a polished oak spine supporting a tapestry of blood orange, dried fruit, and cake spice. Leather-bound books mingle with dark honey and fruit-and-nut chocolate, while a subtle wisp of coal-tar smoke from a wood burner threads through, yielding a remarkably complete, refined aroma.
Palate
More dark and dried fruit than you would find on a Christmas edition of bake off! waxy orange, bitter chocolate, dates, ripe figs, rich honey, sherry or cognac soaked cake, caramelised demorera sugar on baked apples and again hints of wood smoke or something charred here along with a thick, malty and chewy mouthfeel.
Finish
Fruit and nut chocolate, aromatic cake spices, stewed plums in brandy, dark honeycomb, woody tar smoke, polished leather, honey cured ham, preserved figs, brown sugar topped ginger machiato, more late spice and long, long finish.
