Flora and Fauna, nicknamed by the late whisky writer, Michael Jackson, was a themed series of distillery only single malt whisky releases. Each distillery was given a particular creature as its symbol, which is elegantly displayed on each bottle's beautiful label.
Gradually as distilleries were commercialised, closed or sold, the range of Flora and Fauna contracted, leaving these select remaining bottles collectable. Most often blended, whisky from each of these distilleries is rarely bottled as single malt, making each bottle from this collection even more rare.
At the time this was the only available official release from Aultmore and was one of the first bottlings in the Flora & Fauna range from 1991.

Tasting Notes
Colour
Deep warm amber with coppery edges and a sunlit gold core.
Nose
Delicate orchard fruit—pear and apple—leads the nose, lifted by a soft malt sweetness. Sherry-cask influence arrives as dried fig and raisin, with toasted almond and a trace of cocoa. A hint of orange zest and vanilla threads through, yielding a poised, refined aroma with subtle spice.
Palate
Silky, 12-year-old mouthfeel unfolds with pear and dried apricot, layered over toffee and almond. Sherry maturation delivers dark chocolate, raisins, and spice, backed by restrained oak and vanilla. The finish is long and creamy, with a warming, nutty echo.
Finish
Long, refined finish with sherry sweetness enveloping ripe orchard fruits, hints of orange peel and raisin. Spices—nutmeg and cinnamon—linger alongside polished oak, a trace of cocoa, and a warm, graceful fade that lingers softly on the palate.
