Tasting Notes
Colour
Natural amber-gold with warm copper undertones and a sunlit, honeyed glow.
Nose
Aromas of singed straw mingle with preserved lemons and limes, framed by smoked porridge oats and a touch of soot and peppery earth. A coastal breeze carries wet sand, mossy green apples and pears, and a mineral-salty lift with quince jelly.
Palate
On the palate, Key lime pie and preserved lemons open to smoked quince jelly, ripe pear and apple bonbons, with salted vanilla fudge and marzipan. White pepper spice dances with green herbs and green peppers, finishing with a lift of aniseed.
Finish
Mossy and herbal on the finish, with peppery vanilla oak, quince and ripe pear emerging over a bed of sooty peat smoke; green herbs and salted lime linger, punctuated by sugared almonds.
