Colour

Nose

Mineral limestone and mossy herbal notes open with sea-salt spray, then pickled lime and earthy smoke unfold. Subtle pork fat and black bean sauce mingle with wet sand, smoked green apple, and cured meats, while brushed suede and a final veil of soot ash linger.

Palate

Minerally and green-herb driven, with a mossy seaweed attack, the palate unfolds salted cured meats and smoked cheese, a line of lozenges and crisp green pear. Charcoal embers fuse with peppery vanillin oak, leaving a peppery, briny lift that lingers through a smoky, lasting finish.

Finish

Kale with chilli flakes and peppery smoked meats give way to coffee beans roasted over a peat-smoked fire, with mossy apples and pears and a bright lime curd lingering.
