Each bottling of Old & Rare has been matured to perfection, so due to the angels’ share there are comparatively few examples to emerge from each cask.
Presented in a highly distinctive squat bottle, each expression comes beautifully packaged in a specially crafted wooden box. The personal tasting notes of our expert “nose” are included to complement the views of each individual taster. It goes without saying that each cask remains unadulterated by excessive filtration or added caramel.
Although each sip from an Old & Rare cask is an exquisite experience the pleasure must be tempered with a little sorrow, due to the fact that such a taste can never be exactly replicated again.

Tasting Notes
Colour
Deep amber-gold with coppery undertones and mahogany edges, a warm, glossy hue that gleams with age.
Nose
Opulent, sherried aromas rise from the glass: dark raisins and prune mingle with fig, burnt orange zest and cocoa. Rich vanilla, toffee and a touch of caramel weave through the fruit, while oak spice—cinnamon and clove—lends depth, with whispers of leather and tobacco completing a refined, aged perfume.
Palate
Silky, full-bodied and firmly sherried, with dark fruit compote of fig and prune, folded with orange zest, cocoa and caramel. Rich vanilla and toasted oak provide backbone as spices glow: cinnamon, clove and a hint of ginger, leading to a long, velvety finish that lingers with raisin, espresso and wood spice.
Finish
Long, luxurious finish with sherried fruit depth—raisin, fig and orange peel—softly evolving into dark chocolate, toasted almond, and spice. The oak lingers as a warm, velvety glow, leaving a refined, enduring sweetness that coats the palate.
