Tasting Notes

Colour

Rich amber with sunlit gold and honeyed copper highlights, a warm, inviting glow.

Nose

Peach, apple and pine mingle in a bright, fruit-forward aroma. A piney, resinous lift adds crispness, evoking sunlit orchards and evergreen freshness.

Palate

Bright lemon leads the palate, interwoven with dried orange and a delicate honeysuckle sweetness. The citrus stays crisp with floral finesse, leaving a gentle, lingering lift.

Finish

Ginger and clove linger on the finish, a warm, refined spice that softly fades into a lasting peppery glow.

Pearse Lyons Distillery opened in 2017 in the restored former St James’s Church in Dublin’s Liberties, giving it one of the most distinctive homes in Irish whiskey. The project was founded by Dr Pearse Lyons and Deirdre Lyons, with distillation beginning in 2012 before the church restoration was completed, and the distillery taking its name from Pearse Lyons after opening.
