Distiller’s Choice is a blended 7-Year-Old Irish Whiskey of grain and malt whiskeys predominantly aged in ex-Bourbon barrels with a small amount of Sherry barrel aged whiskey in the mix. The Kentucky Bourbon barrels come from our sister distillery in Lexington.

Tasting Notes

Colour

Rich amber-gold with a warm copper glow and a subtle mahogany undertone.

Nose

Bright citrus zest with a whisper of dried fruit; an airy, sunlit bouquet that hints at orchard sweetness and a subtle candied edge.

Palate

On the palate, light oak frames green grape and caramelised pear, with cocoa and dried fruit lending subtle sweetness and a refined, lingering finish.

Finish

A warm, comforting finish of stewed apples and clove, softened by a creamy custard fade that lingers on the palate.

Pearse Lyons Distillery opened in 2017 in the restored former St James’s Church in Dublin’s Liberties, giving it one of the most distinctive homes in Irish whiskey. The project was founded by Dr Pearse Lyons and Deirdre Lyons, with distillation beginning in 2012 before the church restoration was completed, and the distillery taking its name from Pearse Lyons after opening.
