Established in 2014, it produces a range of spirits, including its signature Cotswolds Single Malt Whisky. This whisky is crafted from 100% British barley and aged in a combination of ex-bourbon and sherry casks.

The Cotswolds Inaugural Release is the first single malt whisky produced by the Cotswolds Distillery, released in 2017. It was distilled in 2014 from Odyssey barley, aged in ex-bourbon and red wine casks, and bottled in March 2017. Only 4,000 bottles were produced for this initial release.
