These casks, toasted and charred with scientific exactitude, bestow flavours of peach, butterscotch and spiced molasses. There is so much more to burning oak for preparing casks than meets the eye.

Tasting Notes
Colour
Deep burnished amber with warm copper-gold highlights, like molten caramel and honey glowing in candlelight.
Nose
Immediate crème brûlée, poached pears and scatterings of freshly opened vanilla pods on the nose, opening to custard Danish and scorched sugar brittles.
Palate
Thick with clotted cream, honeyed malt and broiled peaches, it unfolds with a playful splash of freshly mixed custard over an expansive, temperately toasted tarte Tatin. Silky and indulgent, the palate drizzles caramelized sweetness into creamy fruit, finishing with a softly spiced resonance.
Finish
There’s almost the wobble of a perfectly made pannacotta. Gentle nutmeg spice follows on a tributary of silken jersey milk finishing with a whisper of burnt toffee and banana split.
