Tasting Notes
Colour
Sunlit golden amber with honeyed undertones.
Nose
All fresh and inviting candy store pick and mix counter with vanilla, coconut, lemon bon bons, hints of thyme, runny honey, pancakes on the griddle, freshly baked shortbread and sugared almonds.
Palate
Pear tart, vanilla wafers and shortbread biscuits mingle with apple crumble and custard powder. A core of herbal, oily notes yields a very fresh, grassy mouthfeel, with candy-shop fizz, spice and hints of green fig.
Finish
Coconut fudge and vanilla waffles linger with a bright pear drop sweetness, lifted by lemon thyme and a crack of sherbet. A very fresh, zingy, almost prosecco-like fizz persists, softly carrying into sponge cake and freshly baked biscuits.
