Single Copper Pot Still Whisky which is revered by Canadian Whisky connoisseurs. Produced at the Hiriam Walker Distillery in Walkerville, Ontario and double distilled using a malted Rye mash bill, unmalted Rye and corn whisky and aged for about six years in in new charred oak and first fill white oak casks. This was head distillers D.Michael Booth's masterpiece but when released in the 1990's was not a success and now long delisted and a bit of a holy grail of Canadian whisky.

Colour
Deep copper-amber with sunlit honey-gold highlights and a warm, molten glow.
Nose
Opulent nose of toasted oak and char, with warm caramel and vanilla leading a syrupy sweetness. Rye-forward spice—white pepper, clove and hints of anise—drives the aroma alongside toasted grain. Subtle tobacco and leather emerge, while maple, brown sugar and a touch of citrus rind add depth to a layered, timeless Canadian profile.
Palate
Rye-forward and richly toasted, this Lot No. 40 coats the palate with velvety vanilla and caramel, brightened by a kiss of clove. New charred oak lends a warm, chewy sweetness beneath lively rye spice, finishing with peppery length and subtle notes of toasted grain and orchard fruit.
Finish
Long, refined finish with a warming surge of toasted oak and rye spice, intertwined with vanilla from the new charred oak, fading into caramel, dried fruit and a whisper of cocoa. A peppery warmth lingers, inviting another measured sip.
