Tasting Notes
Nose
Garden bonfires and bracken rise into earthy mincemeat, with kumquat and blood orange marmalade brightening the air and a dark treacle sweetness grounding the aroma. Smoked and roasted nuts, leather and sticky figs and dates mingle with shiitake mushrooms, hints of soy sauce, coal tar and smoked shellfish—an opulent, coastal peat perfume with PX richness.
Palate
Smoked cured meats, dark treacle, toasted nuts (pecans & walnuts) blood orange, balsamic vinegar, beetroot crisps, earthy/forest floor notes with some savoury mushroom pate, those soy/umami like nuances again.
Finish
Root ginger, smoked meats, treacle, black jack sweets, soy sauce, mushroom, blood orange, kumquat, balsamic roasted pecan nuts, earthy ripe figs.
