Tasting Notes

Nose

Garden bonfires of bracken with earthy mincemeat notes, kumquat, blood orange marmalade, dark treacle, smoked and roasted nuts, leather, sticky figs and dates, shitake mushrooms with hints of soy sauce, coal tar and smoked shellfish.

Palate

Smoked cured meats, dark treacle, toasted nuts (pecans & walnuts) blood orange, balsamic vinegar, beetroot crisps, earthy/forest floor notes with some savoury mushroom pate, those soy/umami like nuances again.

Finish

Root ginger, smoked meats, treacle, black jack sweets, soy sauce, mushroom, blood orange, kumquat, balsamic roasted pecan nuts, earthy ripe figs.
