Colour
Deep mahogany with burnished copper-amber reflections.
Nose
Garden bonfires and bracken rise into earthy mincemeat, with kumquat and blood orange marmalade brightening the air and a dark treacle sweetness grounding the aroma. Smoked and roasted nuts, leather and sticky figs and dates mingle with shiitake mushrooms, hints of soy sauce, coal tar and smoked shellfish—an opulent, coastal peat perfume with PX richness.
Palate
On the palate, smoked cured meats mingle with dark treacle while toasted pecans and walnuts lend nutty depth. Blood orange and balsamic lift the richness, with beetroot crisps and earthy forest-floor notes anchored by savoury mushroom pâté and a lingering soy/umami undertone.
Finish
Root ginger sparks the palate as smoked meats and treacle unfold, with echoes of black jack sweets and soy. Blood orange and kumquat drift through balsamic roasted pecans, while earthy mushrooms and ripe figs linger, delivering a savory, lasting finish.
