Tasting Notes
Colour
Deep amber with mahogany edges, a coppery glow and sunset-gold sheen.
Nose
Powerful peat and maritime smoke coalesce with rich sherry influence: fig and raisin sweetness, dried cherry, and cacao. Hints of toffee, toasted almond, and spice drift through brine and iodine, while oak lends warmth and vanilla, finishing with a salty, caramelized gloss.
Palate
Majestic peat and maritime smoke cradle a rich sherry core. Dried fig and raisin mingle with treacle, dark chocolate and espresso, while peppery spice drapes the tongue. A saline, mineral edge tightens with age, and the oil-laden mouthfeel coats the palate. Long, warming finish of peat, cocoa and polished oak lingers with echoes of sherry sweetness.
Finish
Extremely long, slowly evolving finish: peat smoke persists alongside sherry-soaked fruit, as dried fig, dark chocolate, and espresso linger on the tongue. Maritime salt and waxy oak rise and recede, leaving a warm, resinous glow that persists well beyond the swallow. A refined, velvety fade that invites another sip.
