Bottled exclusively for the UK, this limited edition is a vatting of two casks (39350 & 39351) which were distilled at the Tomatin Distillery on 10th November 2006, and moved to the finest Spanish Fino Sherry butts on 12th November 2015.
The casks sourced for this expression are from Jerez in Spain, where Fino sherry has been produced for centuries with the most traditional variety of grape, the Palomino Fino. The Palomino Fino white grape variety is arguably the queen of the Sherry region. Its compatibility with the white albariza soil and the local climate, combined with the techniques developed by the growers, result in the most select and sought after sherry in the Region.
Fino’s bright flor and nutty flavours along with Tomatin’s malty backbone and fresh fruits are in perfect harmony. Notes of baked apple and almond cake, toffee sauce and lemon are followed by some more savoury flavours of freshly baked sourdough, olive oil and baking spice resulting in a silky yet fresh finish.
