J.J. Corry The Flintlock - Irish Single Malt Whiskey 16 Year Old
Out of stock
New whiskey! Single malt Irish whiskey from Chapel Gate whiskey bonders, all of which was drawn from a trio of bourbon casks that were allowed to rest for 16 years.
This is a limited edition of 650 bottles of 16-year-old single malt Irish whiskey. It is the first true small-scale bonder's blend Irish whiskey in living memory. The Flintlock is an assemblage (in 1:1:1 ratio) of three partially disgorged ex-bourbon casks of 16-year-old malt whiskey from a single distillery, each with an individual but complementary flavour profile.
The name of The Flintlock is a reference to the independent spirit of this innovative Irish whiskey maker. It is named after a 200-year-old pistol found during renovations to the J.J. Corry tasting room - part of the old farmhouse, which was built in in County Clare in pre-famine times and was long rumoured to be a rebel hideaway.

Tasting Notes
Colour
Bright golden amber with warm honey tones and a sunlit copper glow.
Nose
Vanilla and caramel lead, lifted by creamy malt and honeyed oak. Subtle bourbon spice threads through—cinnamon and clove—while citrus zest and orchard fruit brighten the mid-palate. A delicate coconut whisper adds a soft tropical note, weaving a warm, multi-layered nose that hints at the three-part cask harmony.
Palate
Silky on the palate, the 16-year-old malt unfolds with honeyed vanilla and toffee from its ex-bourbon casks, tempered by citrus brightness and a whisper of toasted oak. Creamy orchard fruit lingers with subtle spice—nutmeg and white pepper—and a delicate coconut undertone. A refined, well-balanced profile leads to a long, graceful finish with gentle sweetness and softly charred oak.
Finish
Silky, enduring finish with warm vanilla and caramel oak at the core. Subtle citrus zest and spice unfold, then linger in a creamy, toffee-rich echo that slowly softens into a refined, oak-kissed warmth.
