Our Bushmills 30 Year Old is patiently matured in bourbon barrels and sherry butts for 14 years before finishing in first-fill Pedro Ximénez casks for 16 years to give generations of rich and elegant dried fruit flavours. Pedro Ximénez is a dark Spanish fortified sweet sherry wine made from white grapes. It’s only made in specific regions, making each sherry butt incredibly sought-after.
Thirty years ago, like today, we specified the exact type, strength and colour of Pedro Ximénez sherry we wanted to season our hand-crafted oak casks.

Deep, dark amber with mahogany depth and ruby‑tinged highlights; a glossy tawny bronze glow.
Nose
Rich, inviting aromas of raisins, figs, prunes and dates entwined with treacle toffee and a touch of soft clove and warm spice, yielding a luscious, sherry-kissed sweetness.
Palate
Exquisite, velvety and smooth on the palate, with notes of dates, raisins and figs intertwined with praline and orange peel, then unfolding to vanilla and warm pastry. The mouthfeel is elegant and creamy, finishing long and luxurious with lingering sweetness.
Finish
Long, complex finish that lingers with dried fruit sweetness—raisins, figs and prunes—alongside treacle toffee, subtle spice and vanilla, fading into polished pastry notes. An elegant, refined finale that beckons a second sip.
