Whisky has been the long-term focus behind the project. West Midlands Distillery lays down single malt casks using 100% English barley, traditional floor malting, small-batch fermentation, experimental yeast strains and direct-fired copper stills, with maturation in a mix of virgin, first-fill and refill casks, often in smaller formats. Its first whisky was bottled on 10 August 2024, and the inaugural release followed on 11 July 2025 as the first single malt whisky produced in the county of West Midlands.
