Colour
Rich amber with warm copper-gold glints and a hint of mahogany.
Nose
Briny, maritime aromas dominate, a pungent sauerkraut-like edge rising over vegetal and herbal notes. Exotic fruits seem to ripen on a hot coastal day beside a fishmonger’s stall, while caraway whispers mingle with earthy, heathery undertones.
Palate
Briny and green, the palate unfolds with vegetal bite and sour green apple, salted tapioca pudding richness. Herbal notes emerge, crowned by smoked grapefruit, with a long white-ash peat smoke that lingers over a sea-salt finish.
Finish
Briny, sauerkraut-like notes linger, with a tangy edge of grapefruit and apple cores. Salty and herbal, they pair with charred green peppers from a smoked-fish BBQ, finishing on white pepper and lingering brine.
