Tasting Notes
Colour
Deep amber with coppery highlights and a warm, mahogany-tinged glow.
Nose
Sherry-soaked sponge cake and nutty nougat unfold into rum baba, dark honey on brown toast and thick-cut marmalade. A ribbon of ginger, mocha and griddled pineapple dusted with demerara sugar, with hints of leather and polished oak.
Palate
Rich dried fruit leads the palate, prunes in cognac and baked figs in dark honey, alongside sticky ginger cake and spiced oak. Full-bodied and warming, the sherry influence lingers with rum-and-raisin chocolate, treacle toffee, and brandy snaps, finishing with nutty, leathered depth.
Finish
Sultana pancakes with spiced honey, dry ginger, sticky dates and fig jam, nutty oloroso sherry, dark chocolate and some savoury/leather notes along with clove studded baked ham.
