Tasting Notes
Colour
Deep golden amber with a warm coppery edge and sunlit honey highlights.
Nose
Fragrant green melon and freshly-cut hay mingle with the crisp lift of barley, enveloped by apple-and-blackcurrant cordial. A delicate trail of butterscotch sauce lingers in the air.
Palate
Barley sugars and under-ripe pears lend gentle sweetness, while vegetal notes of nettle soup and celeriac drift in the background. Red Gala apple comes through crisp and bright, with a subtle salt-and-pepper kick.
Finish
Slightly syrupy, with a touch of fig yoghurt lingering. Spicy and vegetal reappear, with hints of chili, black-bean sauce and bay leaves resting on the palate.
