The mineral-rich water that comes from Josie’s Well helps form the flavours during mashing and fermentation, whilst the specific height and width of the copper stills add a delicate yet complex character.

A delicate, inviting nose of creamy vanilla from American oak, with wisps of honeyed malt. Pear and apple lift the fruit, guarded by subtle citrus zest, while a mineral brightness and light oak spice keep the aroma polished and balanced.
Palate
Silky and approachable on the palate, it opens with creamy vanilla and soft toffee, unveiling crisp pear and orchard apple. Subtle honeyed sweetness coats the tongue, while delicate spice and nutty undertones add lift, finished with a clean, light oak and a lingering, polished softness.
Finish
Elegant and enduring, the finish delivers vanilla-rich sweetness that slowly fades to hints of pear and soft almond, carried on a whisper of oak. Smooth, creamy and lightly mineral, it leaves a clean, satisfying warmth that lingers.
