This is the second Bottled in Bond release from Nicole Austin since she took over as master distiller for Cascade Hollow Distilling Co. in 2018.

This bottling is a blend of whiskies that were distilled in 2008 and matured in the distillery's warehouses for 11 years. Prior to bottling at 100 proof, it underwent the maple charcoal mellowing process required for Tennessee whiskey.

Tasting Notes

Colour

Deep amber with luminous copper highlights and a touch of mahogany.

Nose

A wonderfully nutty aroma of spiced, candied pecans.

Palate

Silky, well-balanced palate with a textured mouthfeel. Blood orange and baked apple notes mingle with buttery candied pecan, vanilla and cinnamon spice, all carried by subtle oak and a refined warmth.

Finish

Long, refined finish with vanilla-spice warmth and a trace of cinnamon that slowly recedes. The buttery candied pecan sweetness lingers, mingled with a soft fruit echo of blood orange and baked apple, leaving a smooth, oak-softened finish that wraps the palate in elegant warmth.

Dickel was a Nashville merchant who entered the whisky trade in the 19th century, and Cascade Hollow Distillery opened in Coffee County in 1878, with Dickel later buying a large share of the business.
