Now in its fourth release, Cellar Aged has become a really exciting part of the Maker’s Mark portfolio and takes a slightly different approach to how we traditionally think about older bourbon.
For 65 years, Maker’s Mark didn’t age its whisky for a decade or more. That wasn’t because they didn’t believe in older whisky, but because the focus has always been on aging to taste rather than simply aging to time. Cellar Aged came from asking whether Maker’s Mark could be matured for considerably longer while still retaining the character and style of the whisky.
The answer was found in the limestone whisky cellar built into the hillside at Star Hill Farm. Unlike the outdoor rickhouses, where barrels experience the extremes of Kentucky’s changing seasons, the cellar remains at around 50°F. This cooler, more consistent environment slows maturation and allows the whisky to age for longer without losing that signature Maker’s Mark character.
