Chimney smoke laces buttery smoked whitefish with bright lemonade, smoky bacon and iodine; salty brine mingles with a teasing hint of yellow fruit peeking through.
Palate
A deep, enveloping mouthfeel with maritime notes—briny rope, lobster boxes and rock pools—brightened by citrus hints that verge toward grapefruit.
Finish
A long, peat-forward finish of wood smoke, with a subtle herbaceous edge that lingers and slowly fades.
