Tasting Notes
Colour
Golden amber with warm honey tones and a subtle copper sheen.
Nose
Smoked Bavarian cheese and cured sausage mingle with leather and sourdough, layered by waxy, scorched orange rind. Earthy sawdust and coffee grounds anchor the aroma, emerging with a subtle hint of smoked nutty nougat.
Palate
On the palate, a juicy dried‑fruit core unfolds—smoked figs counterpointed by heather honey. Gorse‑peat sits atop polished oak and smoked vanilla toffee, with oily herbal notes weaving through. Clove and anise creep in, adding spice as the smoke lingers into a nuanced, lingering finish.
Finish
A long finish where anise and clove linger with leather, heather honey and earthy smoked gorse, finishing with mincemeat and vanilla wood.
