Tasting Notes

Colour

Deep amber-gold with coppery sheen.

Nose

Sherry-edged sweetness opens the nose: dried cherries and raisins mingle with fig and orange zest, a core of plump berries. Toasted almond, dark chocolate, and vanilla thread through the aroma, while polished oak adds elegance and a honeyed suggestion of spice. A refined, inviting prelude to a sherry-kissed palate.

Palate

Silky and richly sherried, the palate reveals fig and raisin sweetness, layered with burnt sugar, cocoa and toasted almond. Spices—cinnamon and nutmeg—rise with creamy vanilla, while a light maritime hint keeps the sweetness balanced, delivering a long, elegant finish.

Finish

Long, velvety finish of dried fruit and cocoa, with toffee and orange zest notes weaving through supple sherry-spice and oak. The warmth lingers, lightly nutty, fading to a delicate, refined sweetness.

(EE-den mill) Eden Mill was founded in 2012 in Guardbridge, just outside St Andrews, and brought distilling back to the area after a gap of more than 150 years. Rooted strongly in its St Andrews identity, the brand has built its name across both gin and whisky rather than starting with whisky alone, and later moved into a larger new distillery and visitor centre on the Eden Estuary at the University of St Andrews’ Eden Campus.
