This Single Batch Double Oak Finish is the flagship of Clonakilty’s Cask Finish Series. A premium product matured in ex-Bourbon casks, it is finished in virgin American oak and STR ex-red wine European oak casks (NEOC, New Era of Cask).
This makes it the world’s first Irish Whiskey to be finished in a NEOC cask. NEOC are ex-red wine barrels from the Bordeaux region of France. They are hand-shaved by traditional coopers, and re-toasted according to each individual distiller’s specification.

Tasting Notes
Colour
Deep warm amber with coppery highlights and a touch of mahogany.
Nose
Vanilla and toffee rise from toasted oak, carried by a subtle red-wine lift. Black cherry and plum weave with cocoa and warm spices, while caramel sweetness threads through a creamy, velvety base. A refined aroma that hints at depth to come.
Palate
Silky and creamy on the palate, vanilla and caramel from the bourbon cask mingle with dark plum and blackberry from the NEOC red-wine finish. Virgin American oak adds toasted spice and cocoa, while soft tannins carry the fruit into a long, elegant, espresso-toned finish.
Finish
Long, luxurious finish with velvety vanilla and toasted oak giving way to Bordeaux-red fruit notes—blackberry, plum and a touch of cherry—coated by subtle cocoa and a refined tannic grip from the NEOC cask, lingering softly with warm spice.
