Scientifically distilled at 022 parts “peat” and 019 parts “sweet”, then micro matured to a precise balance of oaky sweetness and smoky notes, this award winning new age Single Malt pushes the boundaries of flavour.
Ailsa Bay is the first Whisky to have an analysed measurement of sweetness identified and also the only Scotch to undergo a process called micro maturation.

Colour
Pale straw gold with sunlit honey and a subtle amber edge.
Nose
Honeyed vanilla and orchard fruit rise on the nose, tempered by a refined wisp of peat smoke. Creamy toffee and toasted oak layer with a satin sweetness, creating an inviting, balanced aroma that hints at both sweetness and soft, lingering smoke.
Palate
Honeyed sweetness unfolds first—vanilla, toffee, dried fruit—then a refined, smoky spine emerges. Subtle peat adds gentle char, balanced by creamy oak and a whisper of citrus. Micro maturation smooths the sweetness into a long, elegant finish where smoke lingers with a delicate sweetness.
Finish
Long, honeyed finish with a delicate drift of peat smoke; creamy vanilla and oak echo on the palate, leaving a gentle toffee sweetness that lingers.
