More tasty new whisky from the excellent Tomatin distillery. First we have a vintage, 2006 Amontillado Sherry Finished Single Malt. This has spent nine years maturing in first-fill and refill casks, before a three-year secondary maturation period in the ex-Sherry casks. Bottled at 46% abv, the whisky is said to carry rich flavours of ‘dark chocolate, dried fruits, espresso and a hint of nut’. Just 5,400 bottles of the whisky have been created.

Colour

Nose
A lush, inviting nose of dark chocolate and espresso, layered with ripe dried fruits—figs and raisins—and a subtle nutty note. Hints of toasted oak mingle with a whisper of Amontillado sherry, signaling the finish from ex-sherry casks.
Palate
Velvety and rich, with dark chocolate and espresso leading, backed by dried fig and raisin sweetness. A nutty undertone underpins the mid-palate, while the Amontillado finish delivers soft tannins and a cocoa-dried fruit linger that warms the palate to a long, refined finish.
Finish
An indulgent, lingering finish that reveals Amontillado sherry at its core. It drapes the palate in dark chocolate and cocoa, unfurling dried fruits, espresso and a subtle nut. The warmth persists with a velvet, refined fade, leaving a suave echo of Highland elegance.
