Inspired in equal part by the essence of the Surrey Hills countryside and the metropolitan dynamism of New York , Woodcutter’s Daughter challenges the norms of whiskey-making.
A combination of US East Coast and UK rye grains were used with some malted barley. During the fermentation process a period of no temperature control was utilised to contribute to the character of the whiskey. Either side of the Atlantic two different distillation techniques were then employed. Both a continuous still and copper pot still to provide further innovation in the process. The whiskey was then aged in new heavy charred American oak barrels and French oak casks for 3 years.

Colour
Deep amber with sunlit honey-gold tones and a coppery glow.
Nose
An aromatic bridge between countryside hedgerows and urban energy: bright rye spice and grain mingle with vanilla, toffee and orange zest. New American oak adds toasted warmth while French oak lends creamy, woody depth. Subtle leather, pepper and forest resin provide rustic complexity, finishing with a refined, lingering note of smoke.
Palate
Rye-forward and luxurious, the palate opens with peppery warmth—cinnamon, nutmeg and bright citrus peel. Layered vanilla, honeyed toffee and cocoa weave through a full, velvety body, supported by bold oak from new American char and French casks. The finish is warm and refined, with lingering spice and dried fruit.
Finish
Long, warming finish with rye spice and vanilla-caramel from the new oak, wrapped in a silky char. Dried fruit and subtle pepper linger, gradually fading to a refined, oak-driven warmth.
