A big part of Westland’s identity is its emphasis on barley and flavour from the start of production. It works with Washington-grown barley, experiments with non-commodity and heirloom strains, and uses a five-malt recipe built around brewer’s malts rather than relying on a single neutral base malt. Long fermentations with Belgian Saison yeast and a wide range of cask types are also central to the distillery’s style.
Westland has also been one of the key names behind the growth of American single malt as a recognised category. In 2016 it helped assemble the group that formed the American Single Malt Whiskey Commission, and that work fed into the formal US ratification of American Single Malt Whiskey as a category in January 2025. One of the distillery’s most important releases is Garryana, built around native Pacific Northwest oak and closely associated with Westland’s regional identity.
