The distillery has kept a strongly independent, small-scale approach. Its whiskey is triple distilled, matured and bottled in Dingle, with the production process handled in a notably hands-on way from mashing and fermentation through to cask filling and bottling.
Alongside gin and vodka, Dingle has built its whiskey reputation around site-made Irish whiskey from the Kerry distillery itself rather than sourced spirit. In 2025 it introduced a refreshed brand identity and expanded its core whiskey line-up with a 10-year-old single malt and a single pot still release alongside its existing single malt.
