The 2020 vintage was the hottest and driest yet at Hundred Hills. The base wine, selected from our Hill Top Chardonnay parcel, underwent alcoholic fermentation in Rousseau oak cask and no malolactic fermentation was conducted to preserve the perfectly balanced acidity.

After 6 months aging in cask, the wine was bottled and spent 43 months aging on lees at the winery before being disgorged. This Blanc de Blancs is the fourth vintage produced utilising Chardonnay 95 from our Hill Top parcel, a narrow strip of south facing vines on thin soils.
