Fortaleza is a small, family‑run distillery re-evaluating traditional tequila production methods. Led by Guillermo Sauza - fifth generation in a line whose ancestor, Don Cenobio, first exported tequila to the U.S. - Fortaleza embraces time‑honoured practices: cooking agave in brick ovens, crushing with a volcanic stone tahona, fermenting in open‑air wooden vats, and distilling in copper pot stills. Bottles themselves are hand‑blown, adding to the artisanal allure.
