Pearse Lyons
Pearse Lyons Distillery opened in 2017 in the restored former St James’s Church in Dublin’s Liberties, giving it one of the most distinctive homes in Irish whiskey. The project was founded by Dr Pearse Lyons and Deirdre Lyons, with distillation beginning in 2012 before the church restoration was completed, and the distillery taking its name from Pearse Lyons after opening.
