Founded by Rob and Kelly Carpenter with David Robertson, Holyrood was created with a more experimental approach to Scotch whisky production. The distillery works with different malt types, yeasts, fermentation styles and cask recipes, producing whisky alongside gin and other spirits.
Holyrood released its first single malt, Arrival, in 2023, followed by further small-batch releases exploring different parts of the distillery’s production style. Expressions such as Embra, Ambir and Pitch have focused on peat, speciality malts and yeast influence, giving Holyrood a clear place among Scotland’s newer urban whisky distilleries.
