Officially released at the Distillery on August 11, 2012, the original White Rabbit bottle celebrates the 120th Anniversary of the opening of the White Rabbit Saloon. While the Saloon is no longer around, part of its name can still be found in the Distillery’s Visitor Center at the White Rabbit Bottle Shop.
In July of 2013, approximately 1 year after the 120th Anniversary of the White Rabbit Saloon, an update to this bottle was made. Nearly identical to the bottle from 2012, the major difference is shown on the bottle’s front label and on the box where it now reads “Special Edition” instead of “120th Anniversary”.
This small change was made so that the Distillery could continue celebrating the famous White Rabbit Saloon even after the 120th Anniversary date had passed.

Colour
A rich, warm amber with coppery-gilded edges and a honey-bronze glow that catches the light.
Nose
Opulent vanilla and caramel rise, velvety and inviting, with creamy toffee and toasted oak underpinning the bouquet. Subtle notes of orange zest, ripe pear, and honey bloom over soft charcoal and spice, concluding in a warm, balanced sweetness that lingers with refinement.
Palate
Silky, medium-bodied with honeyed vanilla and caramel that coats the tongue, balanced by toasted oak and a touch of corn sweetness. Subtle spice—cinnamon and white pepper—lifts the mid-palate while charcoal mellowing keeps it smooth. The finish is warm and persistent, echoing vanilla, caramel and oak with a refined, lingering sweetness.
Finish
Silky, long finish with vanilla and caramel sweetness, wrapped in toasted oak. A measured wave of spice builds, then fades to a refined whisper of charcoal and fruit, leaving a warm, lingering echo.
