The traditional underpinning of juniper and coriander is supported by native lemon myrtle which is a beautiful alternative to lemon peel. Local quandong and Australian macadamia nuts add softness and spice, while red and green Szechuan give a lovely warm mouthfeel. Fresh apples and grapefruit peel add lift and the resulting gin is bright and dry.
