Summer cocktails do not need complicated ingredients or specialist equipment. With the right bottle, fresh citrus and plenty of ice, it is easy to create refreshing drinks for barbecues, garden parties or relaxed evenings outdoors.
From pineapple tequila and banana rum to strawberry vodka and Mediterranean citrus, these five easy summer cocktail recipes make the most of distinctive spirits available from Hard To Find Whisky.
1. Pineapple Margarita
The classic Margarita is already a summer favourite, but pineapple gives it an even more tropical character. Hacien Pineapple Blanco Tequila combines tequila with ripe pineapple flavour, bright citrus notes and a warm agave finish, making it a natural base for this simple cocktail.
Ingredients
- 50ml Hacien Pineapple Blanco Tequila
- 25ml fresh lime juice
- 15ml triple sec
- 10ml agave syrup
- Ice
- Salt and a lime wedge to garnish
Method
Run a lime wedge around the rim of a rocks glass and dip it into salt. Add the tequila, lime juice, triple sec and agave syrup to a cocktail shaker filled with ice.
Shake thoroughly, then strain into the prepared glass over fresh ice. Garnish with a lime wedge or a small piece of fresh pineapple.
The result is fresh, tangy and tropical, with enough sweetness to balance the lime without overpowering the tequila.
2. Banana Daiquiri
This version of a Banana Daiquiri does not require fresh banana, cream or a blender. Instead, the flavour comes from Discarded Banana Peel Rum, which brings notes of banana, toffee, dried fruit and warming spice to the traditional rum-and-lime recipe.
Ingredients
- 50ml Discarded Banana Peel Rum
- 25ml fresh lime juice
- 15ml sugar syrup
- Ice
- Dried banana or a lime wheel to garnish
Method
Add the rum, fresh lime juice and sugar syrup to a cocktail shaker filled with ice. Shake until thoroughly chilled, then fine-strain into a cold coupe or Martini glass.
Garnish with a dried banana slice or a thin wheel of lime.
This is a cleaner, more refreshing alternative to a frozen Banana Daiquiri, retaining the recognisable tropical flavour while remaining light enough for warm weather.
3. Strawberry Limonade Spritz
A Spritz is one of the easiest drinks to prepare when entertaining. Cîroc Strawberry Limonade combines strawberry and citrus flavours in a colourful spirit that works particularly well with sparkling wine and soda.
Ingredients
- 40ml Cîroc Strawberry Limonade
- 75ml Prosecco
- 25ml soda water
- Ice
- Fresh strawberries and lemon to garnish
Method
Fill a large wine glass with ice and pour in the Cîroc Strawberry Limonade. Add the Prosecco, top with soda water and stir gently to combine without losing too much of the fizz.
Garnish with sliced strawberries and a wheel of fresh lemon.
The finished drink is fruity, lightly sparkling and easy to prepare in larger quantities. For a party serve, keep the ingredients chilled and allow guests to build their own Spritz.
4. Lime Rum Mojito
Fresh mint, lime and crushed ice make the Mojito an obvious choice for summer. Using Dead Man’s Fingers Lime Rum adds another layer of zesty lime alongside the rum’s sweeter caramel notes. The bottle is specifically suited to Mojitos, Daiquiris and long drinks with ginger beer.
Ingredients
- 50ml Dead Man’s Fingers Lime Rum
- 20ml fresh lime juice
- 10ml sugar syrup
- 8–10 fresh mint leaves
- Soda water
- Crushed ice
- Mint and lime to garnish
Method
Place the mint leaves in a tall glass and press them gently with the back of a spoon. Avoid crushing the leaves too heavily, as this can release bitter flavours.
Add the lime rum, fresh lime juice and sugar syrup. Fill the glass with crushed ice and stir well. Top with soda water, add more crushed ice and garnish with a fresh mint sprig and lime wedge.
For a slightly spicier variation, replace the soda water with ginger beer.
5. Mediterranean Citrus Collins
A Collins is a simple combination of spirit, citrus, sugar and soda water. Dutch Barn Mediterranean Citrus Vodka is made with pomelo, orange and lime, giving the drink a broader citrus profile than plain vodka. Dutch Barn is produced at Ellers Farm Distillery in North Yorkshire, with Ricky Gervais joining the business as a co-owner in 2023.
Ingredients
- 50ml Dutch Barn Mediterranean Citrus Vodka
- 25ml fresh lemon juice
- 15ml sugar syrup
- Soda water
- Ice
- Orange, lemon or rosemary to garnish
Method
Add the vodka, lemon juice and sugar syrup to a cocktail shaker filled with ice. Shake well, then strain into a tall glass containing fresh ice.
Top with soda water and stir gently. Garnish with an orange slice, lemon wheel or sprig of rosemary.
The combination of pomelo, orange, lime and lemon produces a crisp, refreshing long drink that works particularly well at the beginning of a summer gathering.
