This rum was distilled in the capital of Belize, using molasses from local cane and a triple column still. It spent three years in South America, maturing in heavily charred virgin American oak. The Elixir Trails transferred it to ex-bourbon casks for six more years' gentle maturation in Scotland.

Tasting Notes
Nose
Warm mango and apple juice with white chocolate, and just a touch of star anise. Then you get piles of vanilla bean extract and cake batter.
Palate
Caramel and tinned fruit syrup with some lovely, tart tropical fruit. Grapefruit and sweet coffee also has the chance to break through this thick, treacly treat.
Finish
More grapefruit bitters with Victoria sponge cake batter.
