Soto, meaning 'outside' in Japanese, draws inspiration from nature and aims to recreate the balance between the elements. Using the highest quality rice, and clear mountain water from the Niigata prefecture, Soto has created a delicate, smooth sake with elegant floral aromas and an earthy palate with plenty of umami.
