Roasting spices has long been known to add more complex flavours in cooking. For the Heavy recipe the producers have roasted juniper, extracting more flavour to build a robust juniper heavy expression of Height of Arrows. By sweetening Heavy in the Old Tom style, the result achieved is a gin that is powerful yet beautifully balanced.
