The distillery sits around 100 metres from the sea, and that maritime setting plays a big part in how the whisky matures. Waiheke Whisky uses organic Canterbury malted barley and fresh rainwater with a coastal influence, and its cask programme includes ex-bourbon barrels alongside Chardonnay and Syrah wine casks. Production has also been shaped by a small founding team around the distillery, including brewer Tony Denny and Patrick Newton, who now leads day-to-day production and quality control.
Waiheke Whisky has built its reputation as a New Zealand single malt producer rather than a broad spirits house, with peat playing an important role in its style. In 2025, DYAD Peat + Port won its category at the World Whisky Awards, and Cantankerous also took Gold, giving Waiheke Whisky one of its strongest international results to date.
