About Ontake
Ontake is a Japanese single malt whisky from Nishi Shuzo, a Kagoshima producer whose roots date back to 1845 and are closely linked to shochu making. The Ontake Distillery began whisky production in 2019 on the Satsuma Peninsula, overlooking Kinko Bay and Sakurajima, with pure mountain water and Nishi Shuzo’s long distilling background shaping the project from the start.
Ontake released its first single malt in 2023, with sherry cask maturation central to the distillery’s style. The whisky is generally built around rich fruit, dried fruit, soft spice, caramel, vanilla and polished oak, giving Ontake a clear place among newer Japanese whisky producers focused on small-batch single malt and distinctive cask influence.
