Pasote is a premium tequila from the Jalisco Highlands, made from estate-grown ripe Blue Weber agave. The agave is hand cut, baked in brick ovens for two days, shredded with a roller mill, then fermented in open-air stainless steel tanks with cultivated local yeasts before double distillation in stainless steel pot stills.
