This Wolfburn Single Malt comes from one of the newest distilleries in Scotland.
This has been matured in ex-peated quarter casks from Islay and is a gently peated whisky. This is a must have for anyone wanting to try one of the newest (and now the most northern of mainland distilleries) whiskies that Scotland has to offer and this is sure to be a collectors item in years to come.
Nose: Green pears and apples, lime and elderflower cordial, green garden herbs, vermouth like notes and all wrapped up in a subtle blanket of sooty/white pepper led peat smoke, some wasabi peas like nuance here too.
Palate: All green fruit and veg (think peppers, lime and pear) also some sweetness (angelica) and oily texture with notes of aniseed, green herbs, lemongrass, green chilli and that sooty white pepper smoke.
Finish: More of that green pepper and unripe apple and pear with a wasabi, green pea and sooty lime cordial tangy/smoke
Jolly good for just a 3 year old malt and i look forward to trying more from this tiny independent distillery based in Thurso.
